In the Kitchen: Blue Apron Subscription: Shrimp Spaghetti

Hi, Everyone!

In an effort to spend less time meal planning and more time reading, I decided to give Blue Apron a try. It costs less than taking the whole family to a restaurant, and it seemed like a fun way to add some new recipes to my repertoire.

Tonight: Shrimp Spaghetti with Cabbage & Toasted Breadcrumbs

YUM. Just, YUM.

Husband wasn’t too thrilled with the shrimp, but we all enjoyed the flavor of this dish. The cabbage was an interesting addition, but definitely one we liked! Who knew our little family liked cabbage so much?

If I make it again:

  1. More spaghetti!
  2. More cabbage!
  3. More garlic!
  4. Skip the shrimp or sub with chicken
  5. Skip the breadcrumbs

Did my kids eat it: Yes. There were, as usual, no leftovers.

Blue Apron Subscription: Beluga Lentil Stew

In an effort to spend less time meal planning and more time reading, I decided to give Blue Apron a try. It costs less than taking the whole family to a restaurant, and it seemed like a fun way to add some new recipes to my repertoire.

Tonight: Beluga Lentil Stew & Squash Agrodolce

Friends, I have a new go-to recipe for lentil stew. The red onion made a HUGE flavor difference; I’ll never make lentils without one again (the epic serving of butter I added at the end didn’t hurt either)!

Maybe it’s because I have two kids under 4, but I’m beginning to realize the estimated prep times are for, you know, Super Ultra Chopper People Who Don’t Have Any Distractions. I started cooking around 5:30; dinner was on the table shortly after 7. That may seem like a really, really long time, but guys, not only did I make this recipe, I also fed a baby, bottled a baby, changed a diaper, scolded a 3-year-old for running his baby sister over with his bike, and answered two phone calls, all without burning anything. I’d call it an average dinner prep night time-wise.

If I make it again (which I’m going to . . . Husband LOVED it):

  1. add extra garlic (oh wait, I did that anyway. GARLIC IS NOM!)
  2. halve the red wine vinegar . . . it was yummy, but it overpowered all the other flavors
  3. forget the fancy breadsticks and pop open a tube of crescent rolls
  4. I’m pretty sure I’m going to say this about every recipe, but here goes: separate the garlic bulbs, plant them in the back yard so I don’t feel like I’m wasting them, and crack open my giant jar of pre-minced stuff. Because, you know, mincing garlic is yuck.

DID MY KIDS EAT IT: No. We didn’t share.

Blue Apron Subscription: Lemon Glazed Catfish

In an effort to spend less time meal planning and more time reading, I decided to give Blue Apron a try. It costs less than taking the whole family to a restaurant, and it seemed like a fun way to add some new recipes to my repertoire.

The Blue Apron box includes ingredients and recipes for three different meals. The default delivery choice is weekly, but you can skip around if you don’t like the week’s choices or just want to take some time off. Each week you have to choose from 5 or 6 different recipes (and yes, there ARE vegetarian options), so you can pick the foods that sound tastiest to you.

The first recipe I tried was: Lemon Glazed Catfish with Collard Greens & um . . . whatever the recipe card says. =)

The recipe was simple and easy to follow, but don’t believe the time approximations unless you’re a master multi-tasker. Aside from cooking materials, the only ingredients you need are salt, pepper, and olive oil. Not too shabby! The instructions also wanted me to keep washing and reusing the same skillet . . . I guess it’s nice to know I could’ve made dinner with only one, but I opted to dirty more dishes and toss them all in the dishwasher at the end.

Check it out! My finished product looks almost mostly sort of like the one in the picture! AND it was DELICIOUS. I rock!

If I made it again, I’d:

~ skip the sugary lemon glaze in favor of plain old lemon juice

~ either invest in a mesh strainer (that freaky grain stuff is SMALL), or replace the grain with couscous or orzo or something easier to find

~ dice the collard greens instead of cutting them into strips so they’d mix more easily with the grain

~ feed the baby before I tried to sit down for a nice, relaxing dinner with Husband

 

The best part: all that packaging is recyclable! Yay!

I can’t wait to try the next recipe! For now, though . . . instead of making a grocery list, I’m going to go read a book. On the couch. With a cup of tea. Thanks, Blue Apron!
