Hi, Everyone!

In an effort to spend less time meal planning and more time reading, I decided to give Blue Apron a try. It’s a fun way to add some new recipes to my repertoire.

Tonight: Baked Spinach & Mozzarella Rigatoni

I really like baked pasta dishes. This was a new version, and it was great! This will be a must once my boys get older. 😉 One thing that I love about these Blue Apron recipes is that they are totally doable at home. The ingredients are easy to find in any grocery store.

Here’s the prep work. The recipe was easy to follow, and the ingredients were fresh.

We had enough lettuce and radishes to make five salads, though the kids salads were a bit smaller than ours. However, this recipe reminded my husband and me how much we love radishes! The dressing was tasty as well.

Here’s the final product! It was delicious!

 

 

If I make it again: I don’t think I will change anything in the recipe. I really liked this dish.

Did my kids eat it: Yes, they did like it.
