Blue Apron Subscription: Seared Cod & Udon Noodles

Hi, Everyone!

In an effort to spend less time meal planning and more time reading, I decided to give Blue Apron a try. It costs less than taking the whole family to a restaurant, and it seemed like a fun way to add some new recipes to my repertoire.

Tonight: Seared Cod & Udon Noodles

OM NOM NOM NOM NOM NOM. And also, NOM.

This recipe was DELICIOUS! Blue Apron forgot to include my hunk of ginger, so I just subbed 2 tsps. of powder. I also ditched the soy sauce in favor of liquid aminos, which my sister tells me is super healthy. She knows this sort of thing, and I can’t really taste the difference, so I go with it.

The internet told me I’d never have to buy scallions again if I simply regrow them from the root bit. I always have a pot of sprouts going, so I tossed ’em in. Will it work? Dunno . . . I’ve been trying to sprout avocado seeds for years now with no luck. It’s fun to try, anyway!

If I make it again: I’d skip the fish; it was gratuitous and didn’t add much flavor.

Did my kids eat it: YUP. We all nommed it, and I’ll definitely be adding this recipe to the regular rotation.
